What’s On It

We start with a creamy birria consommé sauce — rich, savory, and built with the same braising liquid we use to slow-cook the meat. Then we pile on tender chicken birria that’s been braised for hours with dried chiles, cumin, and Mexican oregano until it falls apart. Add mozzarella, provolone, and Monterey Jack for that signature quesabirria cheese pull, and finish with fresh diced onion and cilantro for brightness.
